Meet Our Chef – Chef Peter Willis
Max’s Restaurant & Pub was thrilled to welcome Chef Peter Willis to our culinary team this summer. He has been a wonderful addition, offering creative and fresh dishes to our guests.
Peter Willis is well known in the Mt Washington Valley for excellence and creativity in fine dining with an emphasis on locally sourced vegetables, seafood and meats.
An outdoors enthusiast, Chef Peter Willis grew up in Connecticut, and studied business in college. His career plans changed though, when his parents bought a cabin in New Hampshire and he started cooking there over the summer. He loved it, and soon discovered that the job found him, as it suited his lifestyle. Willis honed his culinary career working at restaurants in Utah and in the White Mountains. While working under another chef at a country inn in the White Mountains, Peter was inspired by the Asian and South Americana elements used in his mentor’s cooking. Chef Peter Willis started his own traveling, picking up influences along the way, deftly incorporating Asian, Southwestern, and Santa Fe elements into his culinary vision.
Peter’s experience in the Valley includes The 1785 Inn, Darby Field Inn and his own restaurant, Coyote Rose, which proved to be a favorite of local residents and visitors alike. It’s fair to say he’s new to the Snowvillage Inn, but certainly not new to Mt Washington Valley. Locals and visitors alike will be excited to learn that Peter is back, cooking up with his usual flavors and flair.
